Baking Eggless Challenge #5: Eggless Orange Fruit n Nut Pound Cake

Hii friends! For our Eggless Challenge this month, Gayathri gave us a Pound Cake Recipe...now we all know what a Pound cake is. The main characteristic of a Pound cake is its dense and tight crumbs and rich taste and texture. Getting the same tight crumbs and dense texture, without the cake being heavy and doughy, is a real challenge. All the egg substitutes I tried to replicate the egg based pound cake texture, didn't really satisfy me. They either turned spongy or had a different taste profile...unlike a pound cake. I tried and experimented to my heart's content with every possible thing, and finally had my Eureka moment when I hit on this one...quite accidentally!! The credit for this month's egg-free recipe goes to my toddler...it was while browsing the nutrition analysis of various diets to feed her that the thought of using Nuts as egg substitute struck me...and you can see the result! I am really really satisfied with the taste as well as the texture. This cake wins hands down on all the points. Dense and tight, yet light and moist...and definitely as rich as a pound cake should be...yay!!!! we have a Winner here...

Baking Eggless Challenge#2: Eggless Victoria Sponge

Phew!! This January flew so fast, the first month of the new year gone in the blink of an eye. A major part of this time was spent in zeroing in for a pre-school for my toddler. Being hyperactive she gets bored pretty quickly....and keeping her wits challenged all the time has become a challenge for my dim-wits 😃😃. She has become extra clingy too!! Her "terrible twos" have started and are giving me one hell of a time. Hence pre-school seemed to be the best option to siphon off her extra energy!! Anyways! back to the topic now...we baked cookies for our first challenge (you can read about it here), so for the second challenge of Jan. month Gayathri gave us a basic sponge cake recipe, also called Victoria Sponge.

Wholewheat mulled wine fruit cake

It is christmas week here in UK, and everybody is in a festive mood. The seasons greetings and holiday cheers have filled the air profusely....there is lot of visiting and gifting going on. Get-togethers and menus are being planned and shopping is in full swing. The air itself feels so charged up and magical that you simply cannot escape the positivity of the season...I know my merry christmas is a tad late (it's almost new year!!) to you guys but still, better late than never....

LIGHT AND MOIST DEVIL'S FOOD CAKE

This Sunday, I was taking stock of my posts uptil now.....and suddenly it hit me, that I don't have any post on "chocolate cake"!! Now, THAT, is an utterly shameful moment for a chocoholic like me! You know, I am that kind of a person whom you can wake up at 2:00 a.m. (not 12:00, as I usually sleep at 12...;)....lols), serve me chocolate, and I'll forgive you for the sin you've committed in waking me up!
Anyways.....after this moment of realization, I was devastated and depressed. Now, there is no better a cure for depression, than "chocolate"!.....even if the depression springs from chocolate itself! And so I went about my task of preparing a chocolate treat for me and my blog baby.....

EASY BUTTERMILK CHOCOLATE CHIP CUPCAKES

My obsession with cakes simply seems to have no end! If I'm short on time I prefer baking cupcakes; and if I really want to indulge, I go for BIG cakes! However frostings are reserved only for special occasions, as firstly, whipped cream still has to make an entry in my local market; and secondly, for me a cake is delicious only if it's able to stand by itself in the flavor department....no trappings required! No....I'm not against frosting, it's just a matter of personal preference. For me, "efforts required" are inversely related to "my-interest-in-the-recipe".....lesser the sweat, better it is with me...;)
So here comes another minimal effort cupcake recipe that uses Buttermilk (aahh....my new fav these days!).
This recipe is from the multi-talented Jessie's site cakespy. She is a cake detective, writer and illustrator; and has many books to her credit (her new book: The secret life of baked goods is in bookstores now!). Coming to the recipe, it looks like lots of ingredients...but it's just mix-and-bake....and voila!! you're done.

BUTTERMILK TUTTI-FRUITY MUFFINS

Have you ever tried baking cakes/ muffins (apart from devil's food cake) with buttermilk??....not yet??
Do it.....I'm sure you'll get addicted, just like me!
Buttermilk cakes are so moist, soft and flavorful...you just can't get enough of them!!
Not only do they taste delish...they look awesome too. Buttermilk makes for a crusty top and mellowy centres; without over-browning the tops. Its tartness adds a beautiful contrast to the sweetness of the cake, without being over-powering.

Just look at the perfectly cracked tops!
Aren't these just perfect for anytime snacking?!

EGGLESS LIGHT FRUIT CAKE

I had been baking cakes for long, but had never tried an eggless version before; partly, because there wasn't any need (as both me and my husband eat eggs), and partly, because of my own doubts regarding what the resulting product might be, in terms of taste and texture? Frankly speaking, I wasn't willing to take the risks as I had nobody to guide me on my eggless ventures.
