Chocolate chip Mini-Muffins

I had recently bought a mini muffin pan and therefore, was itching for ways to use it. The opportunity finally presented itself in the form of hop-in from friends....and on their popular demand, I baked my usual "Perfect cupcakes", in a mini-cuppy form....

 
As I was short on quantity of flour, I halved the recipe. In spite of yielding 14 miniature ones, I wasn't able to lay my hands on even one cuppy.....I guess that's what childhood friendship comprises.....no formalities!!

Ingredients:
1/3 cup Granulated sugar (give it a whirl in the mixer)
1 cup Cake flour
1 tsp Baking Powder
1/4 cup Butter, melted and cooled to room temperature
1 large egg (at room temperature)
1/3 cup Buttermilk
1 tsp Vanilla extract
1/2 cup chocolate chips

Method:
Pre-heat your oven to 180 C. Prepare your pan.
Whisk together flour, baking powder & sugar so as to resemble a coarse mixture.
Add melted butter to the flour mix.
Lightly beat together Egg and buttermilk. Add extract to it.
Mix the wet ingredients with the dry ingredients.
Fold in choco-chips, reserving some for garnishing on top.

Spoon the batter into the mini cupcake pan, filling each cup upto 2/3 of its capacity.
(Don't forget to lick the bowl!!)

Bake at 180 C for 10-15 mins (mine got done at 12 min, so keep checking).
Take the pan out and let it cool.
Pop each cupcake out & enjoy!!
